Angel of Death Cheese Spread Recipe

Ingredients

• 1 head garlic
• 2 tablespoons olive oil
• 1 (8 ounce) container ricotta cheese
• 4 ounces Gorgonzola cheese
• 0.5 cup heavy cream
• 0.75 teaspoon salt
• 4 leaves fresh sage
• 1 18-inch square cheesecloth
• 0.33 cup walnuts, chopped

Instructions

1. Preheat your oven to 400 degrees F (200 degrees C) for roasting.
2. Cut approximately 1/2 inch off the top of the garlic head to reveal the cloves. Drizzle generously with olive oil and wrap tightly in aluminum foil.
3. Roast in the preheated oven until the garlic is soft and golden brown, typically 30 to 40 minutes. Allow to cool slightly before handling, around 5 minutes.
4. Measure out 2 tablespoons of the roasted garlic. Use the flat side of a knife to mash each clove into a smooth, consistent paste.
5. In a medium bowl, use an electric mixer to beat the ricotta cheese until it becomes soft and creamy. Incorporate the Gorgonzola cheese and continue mixing until smooth. Gradually beat in the cream until the mixture thickens. Season with salt, add the garlic paste, and mix until everything is well combined.
6. Arrange the sage leaves, bottom side up, in a decorative pattern on the center of a cheese cloth. Gently spoon the prepared cheese mixture over the sage leaves. Gather the ends of the cheesecloth together and tie them off securely, shaping the cheese into a ball or desired form.
7. Place the cheese in a strainer set over a dish. Allow it to drain in the refrigerator for at least 24 hours to remove excess moisture and allow the flavors to meld.
8. Carefully unwrap and unmold the cheese onto a serving plate, ensuring the sage leaves are facing up for an elegant presentation.
9. Toast the chopped walnuts in a skillet over low heat until they turn golden brown and release their aroma, approximately 3 to 5 minutes. Remove from heat and let them cool for about 5 minutes. Gently press the toasted walnuts onto the cheese spread to garnish. Serve at room temperature for the best flavor.
