Authentic Biscochitos Recipe: New Mexican Christmas Cookies

Ingredients

• 6 cups all-purpose flour
• 1 tablespoon baking powder
• 0.25 teaspoon salt
• 2 cups lard, softened
• 1.5 cups white sugar
• 2 teaspoons anise seed
• 2 eggs eggs
• 0.25 cup brandy
• 0.25 cup white sugar
• 1 tablespoon ground cinnamon

Instructions

1. Preheat your oven to 350°F (175°C). In a bowl, sift together the flour, baking powder, and salt. Set aside.
2. In a large bowl, beat the lard and 1 1/2 cups of sugar with an electric mixer until smooth. Add the anise seed and beat until the mixture is fluffy. Incorporate the eggs, one at a time, followed by the brandy. Gradually stir in the flour mixture until a dough forms.
3. On a lightly floured surface, roll the dough to a thickness of 1/4 to 1/2 inch. Use a fleur-de-lis cookie cutter, or any shape you prefer, to cut out the cookies. Place the cookies on ungreased baking sheets. In a small bowl, combine the 1/4 cup of sugar and cinnamon; sprinkle this mixture over the cookies.
4. Bake in the preheated oven until the edges turn golden brown, approximately 10 minutes.
