Ingredients

• 0.5 cup all-purpose flour
• 5 tablespoons white sugar

• 1 cup milk
• 5 eggs, separated

Instructions

1. Sift together flour, sugar, and salt in a mixing bowl. Gradually pour the milk into the dry ingredients, stirring continuously. Add the egg yolks one at a time, ensuring each is well blended before adding the next.
2. In a separate bowl, whisk the egg whites until stiff peaks form. Gently incorporate 1/3 of the egg whites into the batter, then fold in the remaining egg whites carefully.
3. Melt 1 tablespoon of butter in an 8-inch skillet over medium heat. Pour in half of the batter and cook for about 4 minutes, or until the bottom is browned. Loosen the edges and use a spatula to slide the pancake onto a plate. Invert the pancake back into the skillet and cook until both sides are golden brown, approximately 2 minutes. Transfer to a warm platter and keep warm.
4. Prepare the second pancake following the same steps. Dust generously with confectioners' sugar and serve immediately for the best experience.
