Authentic Santa Fe Hatch Chile Green Sauce Recipe

Ingredients

• 6 ounces Hatch chile peppers, halved and seeded
• 3 tablespoons corn oil
• 1 cup chopped onion
• 2 teaspoons minced garlic
• 2 tablespoons all-purpose flour
• 2 cups beef broth
• 1 teaspoon salt

Instructions

1. Position the oven rack approximately 6 inches from the broiler and preheat. Cover a baking sheet with aluminum foil for easy cleanup.
2. Arrange the chile peppers on the prepared baking sheet, with the cut sides facing down.
3. Broil under the preheated broiler until the chile pepper skins are blackened and blistered, roughly 4 minutes on each side.
4. Transfer the blackened chile peppers to a bowl and cover tightly with plastic wrap to create steam. Let the peppers cool and steam for about 15 minutes, then peel and chop.
5. In a saucepan, heat oil over medium heat. Add onion and cook, stirring occasionally, until browned, approximately 5 minutes. Stir in garlic and cook until fragrant, around 2 minutes. Mix in flour until the mixture thickens. Incorporate the chopped chile peppers, beef broth, and salt. Bring to a boil, then reduce heat and simmer for about 10 minutes to allow the flavors to meld.
