Authentic Springerle Recipe: German Christmas Cookies

Ingredients

• 1.5 tablespoons crushed anise seeds
• 3.5 cups all-purpose flour
• 1 teaspoon baking powder
• 2 cups sugar
• 4 eggs eggs
• 0.5 teaspoon vanilla extract
• 0.25 cup confectioners' sugar

Instructions

1. Prepare cookie sheets by spraying them with cooking spray and sprinkling with anise seeds. Set aside.
2. In a large bowl, combine flour and baking powder. In a separate bowl, beat sugar, eggs, and vanilla with an electric mixer until light and frothy (5-8 minutes). Gradually incorporate the flour mixture into the egg mixture to create a thick dough.
3. On a lightly floured surface, roll out portions of dough to 1/4 inch thickness. Dust with confectioners' sugar. Press springerle molds firmly and evenly into the dough to imprint the design. Cut around each cookie and place them 2 inches apart on the prepared sheets. Repeat until all dough is used. Cover the cookies with a light cotton cloth and let them dry for 8 hours or overnight to set the embossed designs.
4. Preheat oven to 250 degrees F (120 degrees C).
5. Bake cookies until pale brown and set (25-30 minutes). Transfer to a wire rack to cool completely, then store in an airtight container for optimal freshness.
