Instructions

In a saucepan, combine coconut milk, sugar, and salt. In a separate small bowl, mix 3 to 4 tablespoons of the coconut milk mixture with cornstarch until fully dissolved. Pour the cornstarch mixture back into the saucepan. Heat the saucepan over medium heat, stirring continuously until the mixture comes to a boil. Continue to cook, stirring constantly, until the pudding thickens and becomes smooth, about 5 minutes.
