I loved this salad at a popular restaurant and recreated it when they wouldn't share the recipe. While it takes a bit of time, you can prep everything a day ahead. I brought it to the 2011 AR Buckeye Bash and am sharing it now for those who asked. Serve this salad chilled or at room temperature.
