Ingredients

• 1.5 cups all-purpose flour
• 0.25 teaspoon baking powder
• 0.25 teaspoon salt
• 0.13 teaspoon baking soda
• 1 cup white sugar
• 0.5 cup butter, softened
• 1 egg egg
• 1 teaspoon vanilla extract

• 1 lemon, zested and juiced
• 1 drop yellow food coloring, or as desired
• 0.75 cup powdered sugar

Instructions

1. Sift together flour, baking powder, salt, and baking soda in a medium bowl. Set the dry ingredients aside.
2. In a large bowl, beat sugar and butter until creamy using an electric mixer or stand mixer with the paddle attachment. Incorporate egg, vanilla extract, lemon extract, lemon zest, lemon juice, and yellow food coloring. Scrape the bowl's sides and beat to ensure everything is well combined. Gradually add the flour mixture, mixing until just combined.
3. Cover the bowl tightly with plastic wrap and refrigerate the cookie dough for one hour to chill.
4. Preheat your oven to 350 degrees F (175 degrees C). Prepare a baking sheet by lining it with parchment paper or a silicone baking mat.
