Butter Pecan Cake Recipe: A Southern Delight

Ingredients

• 1.25 cups butter

Instructions

1. Gather all your ingredients. Preheat your oven to 350 degrees F (175 degrees C). Grease and flour three 9-inch round cake pans to prevent sticking.
2. Melt 1/4 cup of butter in a heavy-bottomed skillet over medium heat. Add the pecans and cook, stirring constantly, until they are lightly browned and fragrant, about 10 to 15 minutes. Transfer to a plate to cool.
3. In a separate bowl, sift together the flour, baking powder, and 1/2 teaspoon of salt. Set aside for later use.
4. In a large mixing bowl, cream together 1 cup of butter and 2 cups of granulated sugar until the mixture is light and fluffy. Beat in the eggs one at a time, making sure each egg is fully incorporated before adding the next.
5. Gradually add the flour mixture to the butter mixture, alternating with the milk and vanilla extract. Begin and end with the dry ingredients, mixing well after each addition. Gently fold in 1 1⁄3 cups of the browned pecans.
6. Divide the batter evenly among the prepared cake pans. Bake in the preheated oven until the cakes are golden brown and a toothpick inserted into the center comes out clean, approximately 25 to 30 minutes. Let the cakes cool in the pans for a few minutes before inverting them onto a wire rack to cool completely.
7. Prepare the pecan frosting: In a mixing bowl, beat 1/4 cup of butter until light and fluffy. Add 1 teaspoon of vanilla extract, 1/4 teaspoon of salt, and 4 cups of powdered sugar. Gradually add 1/3 cup of cream, beating until the frosting is smooth and spreadable. Add more cream if needed to achieve the desired consistency. Fold in the remaining 2/3 cup of pecans.
8. Once the cakes are completely cool, spread the pecan frosting between each layer and generously cover the top of the cake.
