Captain Jack's Peach Pie Recipe

Ingredients

• 1 (15 ounce) package double crust ready-to-use pie crust
• 1 cup white sugar
• 0.33 cup all-purpose flour
• 1 tablespoon cornstarch
• 0.25 teaspoon ground cinnamon
• 0.25 teaspoon ground cardamom
• 0.25 teaspoon ground allspice
• 0.25 cup butter, melted
• 8 fresh peaches - peeled, pitted, and sliced
• 2 tablespoons rum
• 2 tablespoons milk

Instructions

1. Preheat your oven to 400 degrees F (200 degrees C). Lightly grease a 9-inch pie plate with butter to prevent sticking.
2. Gently press 1 pie crust into the prepared pie plate, ensuring it fits snugly.
3. In a bowl, combine sugar, flour, cornstarch, cinnamon, cardamom, and allspice. Slowly stir in cold butter until the mixture is well combined. In a separate bowl, toss sliced peaches and rum together. Then, add the sugar mixture and gently toss to coat the peaches evenly.
4. Carefully pour the peach filling into the prepared pie crust. Top with the remaining pie crust and seal the edges. Cut 4 to 5 slits in the top crust to allow steam to escape. Brush the crust with milk for a golden finish.
5. Bake in the preheated oven for the initial 15 minutes. Then, lower the oven temperature to 350 degrees F (175 degrees C) and continue baking until the top is beautifully golden brown, approximately 30 minutes more. Once baked, turn off the oven and let the pie rest inside as it cools gradually for at least 1 hour.
