Classic Empire Cookies Recipe

Ingredients

• 0.5 cup butter
• 0.5 cup white sugar
• 1 egg egg
• 1 teaspoon vanilla extract
• 2 cups all-purpose flour
• 1 teaspoon baking powder
• 0.5 cup raspberry jam
• 1 cup confectioners' sugar
• 0.25 teaspoon almond extract
• 1 tablespoon hot water
• 0.25 cup candied cherries, chopped

Instructions

1. Cream the butter, then add the sugar and cream well. Beat in the egg and vanilla extract. Combine the flour and baking powder, then gradually add to the creamed mixture until well combined.
2. On a lightly floured surface, roll the dough out to a thickness of 1/8 inch. Cut into 2-inch rounds and place them on ungreased baking sheets.
3. Bake in a preheated oven at 350 degrees F (175 degrees C) for approximately 10 minutes, or until the edges are very lightly browned. Allow to cool completely.
4. Spread half of the cooled cookies with your favorite jam, then top each with the remaining cookies to create a sandwich.
5. In a bowl, combine confectioners' sugar, almond extract, and just enough hot water to create a thin icing consistency. Frost the tops of the assembled cookies and garnish each with a small piece of candied cherry, if desired.
