Classic Pecan Sandies Recipe

Ingredients

• 1 cup white sugar
• 1 cup margarine, softened
• 1 cup vegetable oil
• 1 cup confectioners' sugar, sifted

• 1 teaspoon vanilla extract

• 2 cups chopped pecans

Instructions

1. Prepare all the necessary ingredients.
2. Preheat your oven to 375°F (190°C).
3. In a large bowl, cream together 1 cup of granulated sugar, butter, oil, and confectioners' sugar using an electric mixer until the mixture is smooth and well combined.
4. Incorporate the eggs one at a time, ensuring each is fully mixed in before adding the next. Stir in the vanilla extract.
5. In a separate medium bowl, blend the flour, baking soda, cream of tartar, and salt. Gradually add this dry mixture to the wet ingredients, mixing until a dough forms. Fold in the chopped pecans.
6. Pour the remaining 1/2 cup of granulated sugar into a small, shallow bowl. Shape the dough into 1-inch balls, slightly flatten each, and roll them in the sugar until fully coated.
7. Arrange the cookies on ungreased baking sheets, leaving about 2 inches of space between each.
8. Bake in the preheated oven until the edges turn a golden brown, approximately 10 to 12 minutes. Transfer the cookies to wire racks and let them cool completely.
