Creamy Mashed Potatoes with Vibrant Spinach Pesto

Ingredients

• 8 red potatoes, peeled and cubed
• 2 cloves garlic, minced
• 1 tablespoon olive oil
• 1 (14 ounce) can vegetable broth
• 0.75 (10 ounce) bag washed fresh spinach
• 0.5 cup grated Parmesan cheese
• salt and pepper to taste

Instructions

1. Place potatoes in a large pot, cover with salted water, and bring to a boil over high heat. Reduce heat to medium-low, cover, and simmer for approximately 20 minutes, or until potatoes are tender. Drain the potatoes and let them steam dry briefly. Meanwhile, in a blender, combine garlic, olive oil, vegetable broth, and spinach. Puree until the mixture is smooth; then, set aside.
2. Once the potatoes are cooked and mashed to a smooth consistency, gently fold in Parmesan cheese. Season with salt and pepper to achieve your preferred taste.
