Decadent Chocolate Lava Cake Recipe - Chef John's Delight

Ingredients

• 2 egg yolks
• 2 eggs eggs
• 3 tablespoons white sugar
• 3.5 ounces chopped dark chocolate
• 5 tablespoons butter
• 4 teaspoons unsweetened cocoa powder
• 3 tablespoons flour
• 1 pinch salt
• 0.13 teaspoon vanilla extract

Instructions

1. Thoroughly grease the interior of four 5 ½-ounce ramekins with butter.
2. In a bowl, whisk together egg yolks, eggs, and sugar using an electric mixer until the mixture is light, foamy, and pale in color.
3. In a microwave-safe bowl, melt the chocolate and butter in short, 30-second bursts, stirring well after each interval, approximately 1 to 3 minutes total.
4. Incorporate the melted chocolate mixture into the egg and sugar mixture, stirring until well combined. Gently sift in the cocoa powder and stir until evenly distributed. Sift in the flour and salt, stirring until just combined into a smooth batter. Finish by stirring in the vanilla extract.
5. Transfer the prepared batter into a resealable plastic bag. Carefully snip off one corner of the bag to form a piping tip. Distribute the batter evenly among the prepared ramekins, then gently tap each ramekin on the countertop to eliminate any trapped air bubbles. Chill in the refrigerator for 30 minutes.
6. Preheat your oven to 425 degrees F (220 degrees C).
7. Position the chilled ramekins within a casserole dish. Add warm tap water to the casserole dish, ensuring it reaches about halfway up the sides of the ramekins to create a water bath.
8. Bake in the preheated oven for 15-18 minutes. Once done, remove from the oven and allow to cool for 15 minutes.
9. Using a knife, carefully loosen the edges of each cake from its ramekin. Invert the cakes onto individual serving plates and generously dust with powdered sugar before serving.
