Delicious Easter Lamb Cake Recipe

Ingredients

• 3 cups sugar, divided
• 1 pound butter, room temperature
• 8 eggs, separated
• 3 cups sifted all-purpose flour
• 0.33 cup bourbon
• 2 teaspoons vanilla
• 2 teaspoons almond extract
• 0.5 cup chopped pecans
• 2 cups white frosting
• sweetened flaked coconut for decorating
• jelly beans or other small candies, or as desired

Instructions

1. Preheat oven to 350°F (175°C). Grease and flour a lamb-shaped cake mold to prevent sticking.
2. In a large bowl, cream together 2 cups sugar and softened butter with an electric mixer until the mixture is light and fluffy. Add egg yolks one at a time, beating well after each addition.
3. Gradually add flour, alternating with bourbon, vanilla extract, and almond extract. Mix until all ingredients are fully combined.
4. In a separate bowl, beat egg whites until they become foamy. Slowly add the remaining 1 cup of sugar, continuing to beat until medium peaks form. The tips of the peaks should curl slightly when you lift the beater.
5. Gently fold ⅓ of the beaten egg whites into the batter using a whisk or spatula to lighten the mixture. Fold in the remaining egg whites, then gently mix in the chopped pecans. Pour about 1 cup of batter into the prepared lamb cake mold. Insert a toothpick into each ear and nose to help the cake maintain its shape during baking. Pour remaining batter into the mold.
6. Bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean, approximately 1 ½ hours. Let the cake cool in the pan for at least 10 minutes, then invert it onto a wire rack to cool completely, about 50 minutes more.
7. Transfer the completely cooled cake to a serving plate. Decorate with your favorite frosting, shredded coconut, and colorful candies for an Easter-themed treat.
