Delicious Fresh Strawberry Cheesecake Pie Recipe

Ingredients

• 1 (9 inch) unbaked deep dish pie crust
• 1 (8 ounce) package cream cheese, softened
• 0.5 cup white sugar
• 2 eggs eggs
• 2 tablespoons lemon juice
• 0.75 cup water
• 2 tablespoons cornstarch
• 2 tablespoons strawberry-flavored Jell-O® mix
• 1 quart fresh strawberries, hulled and sliced

Instructions

1. Preheat your oven to 400 degrees F (200 degrees C) for baking.
2. Bake the pie crust until it reaches a golden brown color, approximately 10 minutes. Take the crust out of the oven and let it cool down. Lower the oven temperature to 350 degrees F (175 degrees C).
3. In a mixing bowl, beat together the cream cheese, ½ cup of sugar, eggs, and 2 tablespoons of lemon juice until the mixture is nice and smooth. Then, pour the creamy filling into the prepared pie crust.
4. Place the pie in the preheated oven and bake until the filling is completely set, around 30 minutes. Allow the pie to cool completely before adding the topping.
5. In a medium saucepan, whisk together water, the remaining ½ cup of sugar, cornstarch, gelatin mix, and the remaining 1 tablespoon of lemon juice until smooth. Heat over medium heat, bringing to a simmer. Cook, while stirring continuously, until the gelatin dissolves and the glaze thickens to your liking, about 5 to 10 minutes. Let cool slightly.
6. Carefully arrange the sliced strawberries attractively on top of the cooled pie. Pour the warm glaze evenly over the strawberries. Refrigerate the pie to chill thoroughly before serving and enjoy!
