Delicious Meat and Eggplant Lasagna Recipe
This lasagna recipe, while requiring some time, is well worth the effort. It's an adaptation of my grandmother's recipe, enhanced with a variety of vegetables, including eggplant. Feel free to customize the meat sauce with your favorite seasonal vegetables. I used what was available and on sale, but spinach, broccoli, or diced tomatoes would also be excellent additions. For those who enjoy a spicy kick, consider adding crushed red pepper. I prefer a less salty sauce, so adjust the salt according to your preference. Since my oven tends to run hot, adjust the baking time as needed to ensure the lasagna is thoroughly heated. Enjoy!
