Delicious Sweet Green Tomato Ketchup Recipe

Ingredients

• 5 green tomatoes, chopped
• 1 white onion, chopped
• 1 red bell pepper, seeded and chopped
• 0.5 cup pickling salt
• 1 cup white vinegar
• 0.67 cup packed brown sugar
• 10 tablespoons white sugar
• 1 tablespoon dark corn syrup
• 1 teaspoon ground cinnamon
• 1 teaspoon pumpkin pie spice
• 8 whole cloves

Instructions

1. In a large bowl, layer tomatoes, onion, and bell peppers, sprinkling each layer with pickling salt. Cover the bowl with plastic wrap and refrigerate for 4 to 5 hours to allow flavors to meld.
2. Move the vegetables to a colander and rinse thoroughly under running water to remove the salt. Transfer the rinsed vegetables to a pot with a lid. Add vinegar, brown sugar, white sugar, corn syrup, cinnamon, pumpkin pie spice, and whole cloves. Bring the mixture to a boil, then reduce the heat to medium and simmer, uncovered, for about 30 minutes, or until the vegetables are very soft and the tomatoes begin to lighten in color.
3. Press the cooked vegetables through a sieve to create a smooth ketchup, making sure to remove and discard all cloves. Allow the ketchup to cool completely before storing it in a bottle in the refrigerator.
