Easy Cajun Blackened Catfish Recipe

Ingredients

• 1 teaspoon kosher salt
• 1 teaspoon ground black pepper
• 1 teaspoon ground cayenne pepper
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• 1 teaspoon paprika
• 1 teaspoon dried parsley
• 0.5 teaspoon dried oregano
• 0.5 teaspoon dried thyme
• 4 (4 ounce) catfish fillets, skinned
• 0.75 cup unsalted butter

Instructions

1. In a shallow bowl, combine salt, black pepper, cayenne pepper, garlic powder, onion powder, paprika, parsley, oregano, and thyme. Mix well to ensure all spices are thoroughly incorporated. Press each catfish fillet into the spice mixture, ensuring a generous and even coating on both sides.
2. Melt butter in a bowl and set aside for basting.
3. Set up a portable heat source outdoors, such as a butane burner or the side burner of your gas grill. Ignite the burner and place a large cast-iron skillet on top, heating it over high heat. Pour approximately 1/4 cup of the melted butter into the hot skillet.
4. Once the butter in the skillet is smoking hot, carefully lay the spice-crusted catfish fillets into the skillet. Cook the fillets until the spices form a blackened crust and the catfish is cooked through, opaque, and flakes easily with a fork, about 3 minutes per side. Be mindful of the intense smoke!
5. To serve, drizzle the remaining 1/2 cup of melted butter over the blackened catfish fillets.
