Instructions

Combine tomatillos, onion, jalapeños, water, and garlic in your Instant Pot or multi-functional pressure cooker. Secure the lid, and set to high pressure for 10 minutes, allowing 10-15 minutes for the pressure to build.
Carefully release the pressure using the quick-release method, which should take about 5 minutes. Once the pressure is fully released, unlock and remove the lid. Allow the mixture to cool for 10 minutes.
Stir in fresh cilantro, lime juice, and salt. Use an immersion blender to blend the ingredients until you achieve a smooth consistency.
Transfer the salsa verde into 2 pint-sized canning jars, and secure with lids. Refrigerate until the salsa is thoroughly chilled and has thickened.
