Easy Italian Ricotta Cookies Recipe

Ingredients

• 0.5 cup butter, softened
• 1 cup white sugar
• 2 eggs eggs
• 1 teaspoon vanilla extract
• 8 ounces ricotta cheese
• 2 cups all-purpose flour
• 0.5 teaspoon baking soda
• 0.25 teaspoon salt
• 2 tablespoons butter, softened
• 2 cups confectioners' sugar
• 0.25 teaspoon vanilla extract
• 1.5 tablespoons milk

Instructions

1. Preheat your oven to 350 degrees F (175 degrees C). Grease your cookie sheets to prevent sticking.
2. In a medium bowl, cream together 1/2 cup of butter and white sugar until smooth and creamy. Beat in the eggs one at a time, then stir in the vanilla extract and ricotta cheese. In a separate bowl, combine the flour, baking soda, and salt; gradually stir this dry mixture into the ricotta cheese mixture. Drop by rounded teaspoonfuls onto the prepared cookie sheets, leaving about 2 inches of space between each cookie.
3. Bake in the preheated oven for approximately 8 to 10 minutes, or until the edges of the cookies are lightly golden. Allow the baked cookies to cool on the baking sheet for about 5 minutes before carefully transferring them to a wire rack to cool completely.
4. In a medium bowl, cream together the remaining butter and confectioners' sugar until smooth. Beat in the vanilla extract and gradually add milk until you achieve a spreadable frosting consistency. Frost the cooled cookies generously with the prepared icing.
