Easy Jiffy Corn Casserole Recipe

Ingredients

• 0.25 cup butter
• 1 large onion, diced
• 0.5 large green bell pepper, diced
• 1 (4 ounce) jar chopped pimento peppers
• 1 (8 ounce) package corn muffin mix (such as Jiffy®)
• 1 (4 ounce) can diced green chiles
• 1 (15.25 ounce) can whole kernel corn, with liquid
• 1 (15.25 ounce) can creamed corn
• 2 eggs eggs
• 1 pint sour cream
• 1 cup shredded Cheddar cheese

Instructions

1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
2. Melt butter in a large skillet over medium heat. Add onion, bell pepper, and pimento peppers; cook until softened, about 5 minutes.
3. In a large bowl, combine corn muffin mix, chiles, whole kernel corn, creamed corn, and eggs; mix in onion mixture.
4. Transfer to the prepared baking dish.
5. Evenly spread sour cream over the top; sprinkle with cheese.
6. Bake in the preheated oven until golden brown and set, approximately 45 minutes.
