Easy Strawberry Cookies Recipe with Fresh Strawberries

Ingredients

• 1.5 cups white sugar
• 1 cup butter, softened
• 1 egg egg
• 3 tablespoons strawberry puree
• 2.75 cups all-purpose flour
• 1 teaspoon vanilla extract
• 0.5 teaspoon baking powder
• 0.5 teaspoon salt
• 0.5 cup white sugar
• 1 teaspoon red colored sugar

Instructions

1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.
2. In a large bowl, cream together 1 ½ cups of granulated sugar and softened butter with an electric mixer until light and fluffy, about 3 minutes. Beat in the egg, then add the strawberry puree and mix until well combined.
3. In a separate bowl, whisk together the flour, vanilla extract, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing with a spoon until just combined. Be careful not to overmix the dough.
4. In a small, shallow bowl, combine 1/2 cup of granulated sugar and red sugar.
5. Shape the dough into walnut-sized balls. Roll each ball in the red sugar mixture to coat completely. Place the sugared dough balls 1 ½ inches apart on the prepared baking sheets. Gently flatten each ball with your fingers.
6. Bake the cookies in the preheated oven for 10 to 15 minutes, or until the edges are lightly golden brown. Transfer the cookies to a wire rack to cool completely.
