Festive Red and Green Christmas Jalapeno Jelly Recipe

Ingredients

• 1 cup chopped red bell pepper
• 0.5 cup chopped jalapeno pepper
• 5 cups white sugar
• 1.5 cups apple cider vinegar
• 1 (6 fluid ounce) container liquid pectin

Instructions

1. Remove stems, veins, and most seeds from the bell peppers and jalapenos. Finely mince the peppers using a food processor.
2. In a 5-quart pot over high heat, combine the minced bell peppers, jalapenos, sugar, and vinegar. Bring the mixture to a vigorous rolling boil and continue boiling for 3 minutes. Remove from heat and let it cool for 5 minutes.
3. While stirring constantly, add the pectin to the mixture and allow it to cool for an additional 2 minutes. Then, stir continuously for 1 minute.
4. Carefully pour the jelly into hot, sterilized jars and top each jar with a sterilized lid. Secure the lids with bands and allow the jars to cool gradually to create a proper vacuum seal.
