Grilled Chicken with Peach Sauce: Easy Summer Recipe

Ingredients

• 8 skinless, boneless chicken breast halves
• 1 pinch salt and ground black pepper to taste
• 2 cups peach preserves
• 3 tablespoons extra-virgin olive oil
• 2 tablespoons soy sauce
• 1 tablespoon finely chopped garlic
• 1 tablespoon Dijon mustard
• 4 ripe peaches, halved and pitted

Instructions

1. Preheat your outdoor grill to medium heat and lightly oil the grill grate to prevent sticking.
2. Season the chicken breasts generously with salt and freshly ground black pepper; set them aside. In a mixing bowl, combine the peach preserves, olive oil, soy sauce, minced garlic, and Dijon mustard; season with salt and black pepper to taste. Reserve approximately ½ cup of the peach sauce for basting the chicken later.
3. Place the seasoned chicken on the preheated grill and cook until the bottoms are golden brown, about 6 to 7 minutes. Flip the chicken and continue cooking for an additional 5 to 6 minutes. Brush both sides of each chicken breast with the prepared peach sauce; cook until the chicken is cooked through and the juices run clear when pierced with a fork, about 4 to 5 minutes more. Use an instant-read thermometer inserted into the center of the chicken to ensure it reaches an internal temperature of at least 165 degrees F (74 degrees C).
4. Place the peach halves, cut-sides down, on the preheated grill and cook for approximately 2 minutes. Flip the peach halves and brush generously with the reserved ½ cup of peach sauce. Continue cooking until the peaches are tender and slightly caramelized, about 3 to 4 minutes.
