Homemade Fortune Cookie Recipe

Ingredients

• cooking spray
• 1 large egg white
• 0.13 teaspoon vanilla extract
• 0.25 cup unbleached all-purpose flour
• 0.25 cup white sugar
• 1 pinch salt

Instructions

1. Preheat your oven to 400°F (200°C). Grease two cookie sheets well with cooking spray and gather all ingredients.
2. Prepare your fortunes by writing them on strips of paper, each about 4 inches long and 1/2 inch wide.
3. In a bowl, whisk together the egg white and vanilla extract until foamy. Sift in the flour, sugar, and salt, then stir until well combined.
4. Drop two spoonfuls of batter onto the prepared cookie sheet, spacing them at least 4 inches apart. Tilt the sheet to spread the batter into 3-inch circles.
5. Bake in the preheated oven for about 5 minutes, or until the cookies are pale in the center and golden brown around the edges.
6. Quickly remove a cookie from the oven with a wide spatula and place it upside down on a wooden board. Place a fortune in the center of the cookie and fold it in half.
7. Drape the folded edge of the cookie over the rim of a measuring cup or coffee mug. Gently pull the pointed edges down, one inside the cup and one outside, to create the fortune cookie shape. Place the shaped cookie in a muffin tin or egg carton to cool and set. Repeat with the remaining cookie from that batch.
8. While the first batch is baking (Step 5), prepare two more cookies on the second cookie sheet (Step 4). Shape the first batch of baked cookies (Step 6) while the second batch is baking. Continue this process until all cookies are baked and shaped.
