Homemade Pretzel Dogs Recipe

Ingredients

• 2 (.25 ounce) packages active dry yeast
• 2.5 teaspoons white sugar
• 2 cups warm water
• 2 cups warm milk
• 0.5 cup vegetable oil
• 1.5 teaspoons salt
• 10 cups all-purpose flour
• 2 teaspoons baking soda
• 2 (16 ounce) packages hot dogs
• 0.25 cup coarse kosher salt, or to taste

Instructions

1. Gather all of your ingredients for the pretzel dogs.
2. In a small bowl, combine the yeast and sugar with 2 cups of warm water (no more than 100 degrees F or 40 degrees C). Let it sit for about 20 minutes until the yeast softens and becomes foamy.
3. In a large mixing bowl, mix the yeast mixture with warm milk, oil, and salt. Stir in half of the flour until it's well combined. Then, gradually add the remaining flour (1 cup at a time), mixing after each addition. The dough should be somewhat stiff and slightly sticky.
4. Turn the dough onto a lightly floured surface and knead for about 8 minutes until it's smooth and elastic.
5. Grease a large bowl with cooking spray, place the dough inside, and turn to coat. Cover the bowl with plastic wrap or a light cloth. Let the dough rise in a warm place (80 to 95 degrees F or 27 to 35 degrees C) for approximately 45 minutes, or until it doubles in size.
6. Once the dough has risen, fill a large pot with about 8 cups of water, 1 1/2 teaspoons of salt, and the baking soda. Bring to a rolling boil over high heat.
7. While the water heats up, divide the dough into 20 pieces (golf ball size). Roll each piece into a 12-inch rope, about 1 1/2 inches thick.
8. Preheat your oven to 375 degrees F (190 degrees C) and lightly grease two baking sheets.
9. Using tongs, dip a dough strip into the boiling water for about 5 seconds. Remove it and place it on a paper towel for a few seconds to drain.
10. Wrap the dough strip around a hot dog, place it on a baking sheet, and sprinkle with coarse salt. Repeat with the remaining dough and hot dogs.
11. Bake in the preheated oven for 15 to 20 minutes, or until the pretzel dogs are golden brown.
