Irresistible Apple Spice Coffee Cake Recipe

Ingredients

• 0.5 teaspoon butter, or as needed
• 2 cups all-purpose flour
• 0.75 cup brown sugar
• 0.5 cup vegetable oil
• 0.5 cup white sugar
• 4 teaspoons ground cinnamon
• 0.5 teaspoon fine salt
• 0.5 teaspoon ground ginger
• 0.75 teaspoon baking powder
• 0.75 teaspoon baking soda
• 0.75 cup buttermilk
• 1 egg egg
• 2 apples - peeled, cored, and cut into 1/2-inch chunks

Instructions

1. Preheat your oven to 325°F (165°C). Grease an 8-inch glass baking dish with butter for best results.
2. In a mixing bowl, combine the flour, brown sugar, oil, white sugar, 2 teaspoons of cinnamon, salt, and ginger. Remove ½ cup of this mixture to a separate bowl and stir in the remaining 2 teaspoons of cinnamon. Set this crumble topping aside.
3. In the main bowl, whisk baking powder and baking soda into the remaining flour mixture. In a separate measuring cup, whisk together the buttermilk and egg until fully combined. Pour the wet mixture into the dry ingredients. Add the diced apples and gently stir until just combined, ensuring no dry flour remains. Pour the batter into the prepared baking dish and evenly sprinkle with the cinnamon crumble topping.
