0.5 cup ketchup
4 tablespoons unsweetened pineapple juice
4 tablespoons molasses

2 tablespoons prepared Dijon-style mustard

8 chicken thighs

Instructions

To prepare the glaze: In a medium bowl, combine ketchup, pineapple juice, molasses, rum, mustard, and garlic. Season with salt and pepper to your liking and mix thoroughly.
Place the chicken pieces in a lightly oiled 9x13 inch baking dish. Brush both sides with approximately half of the prepared glaze. Cover the dish and refrigerate to marinate for at least 2 hours, or preferably overnight. Keep the remaining glaze refrigerated.
Preheat your oven to 375 degrees F (190 degrees C).
Lightly brush one side of the chicken pieces with some of the reserved glaze and bake uncovered in the preheated oven for about 25 minutes. Turn the pieces, brush with the remaining glaze, and continue baking for another 25 minutes, or until the chicken is cooked through and tender.
Preheat your oven to broil.
Position the chicken under the broiler and lightly brown both sides, approximately 2 to 3 minutes per side. (Important: Keep a close watch, as the sugary glaze can burn quickly!)
