Ingredients

• 1.75 cups packed brown sugar
• 3 eggs eggs
• 1 cup vegetable oil
• 2 (1 ounce) squares unsweetened chocolate, melted
• 2 cups all-purpose flour
• 1 teaspoon baking powder
• 1 teaspoon baking soda
• 0.5 teaspoon salt
• 2 cups grated zucchini
• 0.75 cup chopped walnuts
• 1 (16 ounce) package chocolate frosting

Instructions

1. Preheat your oven to 350°F (175°C). Prepare two 12-cup muffin tins by greasing them or using paper liners.
2. In a mixing bowl, beat together brown sugar and eggs with an electric mixer until the mixture becomes thick and pale (approximately 10 minutes). Gradually beat in oil and melted chocolate until well combined.
3. In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Gently stir this dry mixture into the brown sugar mixture until just combined. Fold in the shredded zucchini and ½ cup of walnuts until evenly distributed. Divide the batter evenly among the prepared muffin cups, filling each about ⅔ full.
