Irresistible Lemon Brownies Recipe

Ingredients

• 0.75 cup all-purpose flour
• 0.75 cup white sugar
• 0.5 cup unsalted butter, softened
• 0.5 teaspoon sea salt
• 3 eggs eggs
• 2 tablespoons lemon juice
• 1 tablespoon lemon zest, plus more for icing
• 1 cup confectioners' sugar
• 0.25 cup lemon juice
• 0.25 teaspoon vanilla extract

Instructions

1. Get all of your ingredients ready.
2. Preheat your oven to 350°F (175°C). Grease an 8x8 inch square baking pan to prevent sticking.
3. In a large mixing bowl, combine flour, granulated sugar, melted butter, and salt. Use an electric mixer to beat until the mixture is well combined.
4. In a separate bowl, whisk together the eggs, 2 tablespoons of lemon juice, and 1 tablespoon of lemon zest until lightly combined.
5. Pour the egg mixture into the flour mixture. Using an electric mixer on medium speed, beat until the batter is smooth, about 3 minutes.
6. Pour the brownie batter evenly into the prepared baking pan.
7. Bake in the preheated oven for 23-25 minutes, or until a toothpick inserted into the center comes out clean. Let the brownies cool on a wire rack until the bottom of the pan is only warm to the touch.
8. While the brownies are cooling, prepare the lemon glaze: In a bowl, whisk together the powdered sugar, 1/4 cup of lemon juice, vanilla extract, and lemon zest until smooth. Spread the lemon glaze evenly over the cooled brownies. Cut into squares to serve.
