Ingredients

• 2 cups margarine
• 4 (3 ounce) packages cream cheese
• 4 cups all-purpose flour
• 2.5 cups packed brown sugar
• 3 eggs eggs
• 3 tablespoons melted butter
• 0.5 teaspoon vanilla extract
• 1 pinch salt
• 1.5 cups chopped pecans

Instructions

1. Preheat your oven to 350°F (175°C). Generously grease your mini tart or mini muffin pans to prevent sticking.
2. In a large bowl, use an electric mixer to beat together the butter and cream cheese until smooth and fully combined. Gradually beat in the flour, one cup at a time, until a smooth dough forms.
3. Shape the dough into small balls. Press each ball evenly into the bottom and up the sides of the prepared mini pans to create the crust.
4. In a separate medium bowl, whisk together the brown sugar, eggs, melted butter, vanilla extract, and salt until the mixture is smooth and well combined.
5. Evenly distribute the pecans into the mixture. Carefully spoon the pecan mixture into each crust, filling it about 2/3 full to allow for rising during baking.
6. Bake in the preheated oven until the crust turns a beautiful golden brown and the filling has puffed up nicely, approximately 15 to 18 minutes. Allow the tassies to cool briefly in the pans before carefully transferring them to a wire rack to cool completely.
