Linzer Cookie Recipe: A Festive Holiday Treat

Ingredients

• 2 cups all-purpose flour
• 0.5 teaspoon baking soda
• 0.25 teaspoon salt
• 0.25 teaspoon ground cinnamon
• 0.75 cup white sugar
• 0.5 cup butter at room temperature
• 0.25 cup egg substitute
• 1 teaspoon vanilla extract
• 0.25 cup seedless raspberry jam
• 1 tablespoon confectioners' sugar, or as needed

Instructions

1. In a mixing bowl, whisk together the flour, baking soda, salt, and cinnamon until well combined.
2. Using an electric mixer on high speed, cream together the granulated sugar and butter until light and fluffy. Beat in the egg and almond extract until fully incorporated.
3. Gradually add the flour mixture to the sugar-butter mixture, mixing until a soft dough forms. Divide the dough in half, wrap each portion in plastic wrap, and refrigerate for at least 1 hour to chill.
4. Preheat your oven to 375 degrees F (190 degrees C). Line two large baking sheets with parchment paper for easy release.
5. On a lightly floured surface, roll one dough ball into a 1/8-inch thick rectangle. Use your favorite cookie cutters (square, star, or circular) to cut out 32 cookies. Repeat with the remaining dough. Cut out the center of 32 of the cookies using a 1-inch cookie cutter. Arrange all 64 cookies on the prepared baking sheets, leaving about 1 inch of space between each.
6. Bake in the preheated oven for approximately 10 minutes, or until the edges are lightly golden brown. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.
7. Spread about 1/2 teaspoon of raspberry jam onto the center of each whole cookie. Dust the cut-out cookies generously with confectioners' sugar. Carefully place a sugared cut-out cookie on top of each jam-filled cookie to create a sandwich.
