Linzer Tart Cookies Recipe

Ingredients

• 1.25 cups unsalted butter, softened
• 0.67 cup white sugar
• 2 cups sifted all purpose flour, divided
• 1.75 cups ground almonds
• 0.13 teaspoon ground cinnamon
• 5 tablespoons raspberry jam, or as needed
• 0.33 cup confectioners' sugar for decoration

Instructions

1. In a mixing bowl, beat butter and sugar with an electric mixer until the mixture is light and fluffy, approximately 2 to 3 minutes. Gradually mix in 1/2 cup of flour, followed by ground almonds and cinnamon. Continue adding the remaining flour, 1/2 cup at a time, ensuring each addition is well combined until the dough stiffens slightly.
2. Divide the dough into two equal halves, shaping each half into a disk. Wrap each disk tightly with plastic wrap and refrigerate for 1 hour to allow the dough to chill.
3. Preheat your oven to 325 degrees F (165 degrees C). Line two baking sheets with parchment paper to prevent sticking.
4. Working with one dough disk at a time, roll the dough on a lightly floured surface until it reaches a thickness of 1/8 inch. Use a 2 ½-inch round cookie cutter to cut out as many circles as possible from the dough; aim for about 12 circles. Arrange the dough circles on the prepared baking sheet, spacing them approximately 1 inch apart. Place the baking sheet in the refrigerator to keep the dough cool.
5. Gather any leftover scraps, knead them into a ball, and roll the dough out again to a 1/8-inch thickness. Cut out additional circles, aiming for about 12 more circles.
6. Place the second batch of circles onto the remaining baking sheet. Using a 1/2-inch round cookie cutter, cut out the center from half of all the cookies to create the signature Linzer cookie look.
7. Bake the cookies in the preheated oven until the edges are lightly golden brown, which should take about 10 to 15 minutes. Transfer the baked cookies to a wire rack and allow them to cool for 20 minutes.
8. Spread a thin, even layer of jam onto the bottom sides of the fully round cookies. Carefully place a cut-out cookie on top of each one, gently pressing them together to form a sandwich. Return the assembled cookies to the wire rack and repeat the process to form 11 more cookies.
9. Sift confectioners' sugar generously over the cookies to give them a classic look, then spoon a small dab of jam into the center of each cut-out part to finish.
