1.5 cups all-purpose flour, sifted

0.5 cup ground hazelnuts
1 egg, beaten

Instructions

Gather all of the necessary ingredients for the hazelnut cookies.
In a mixing bowl, cream together the butter, sugar, egg, and salt until light and fluffy. Gradually incorporate the flour and baking soda, mixing until just combined. Stir in the ground hazelnuts.
Transfer the dough to a lightly floured surface and shape it into a 2 1/2 inch log. Wrap tightly in wax paper and refrigerate overnight or for at least 8 hours.
Preheat your oven to 375 degrees F (190 degrees C). Lightly grease your baking sheets. Unwrap the chilled dough log and slice it into 1/8 inch thick rounds.
Arrange the cookie slices on the prepared baking sheets, leaving approximately 2 inches between each cookie. Brush the tops of the cookies with beaten egg and, if desired, add festive sprinkles.
Bake in the preheated oven for 12 to 15 minutes, or until the edges are lightly golden brown. Allow the cookies to cool completely on wire racks before storing them in an airtight container.
