Pink Lemonade Cookies Recipe

Ingredients

• 0.5 cup butter, softened
• 0.5 cup white sugar
• 0.5 teaspoon baking powder
• 0.25 teaspoon baking soda
• 0.33 cup frozen pink lemonade concentrate, thawed
• 1 egg egg
• 1.75 cups all-purpose flour
• 2 cups confectioners' sugar
• 2 tablespoons frozen pink lemonade concentrate, thawed
• 2 tablespoons butter, softened
• 2 drops red food coloring

Instructions

1. Preheat your oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper for easy cleanup.
2. In a large bowl, cream together ½ cup butter with an electric mixer until smooth. Gradually add white sugar, baking powder, and baking soda, mixing until well blended. Incorporate ⅓ cup lemonade concentrate and the egg, beating until fully combined. Slowly add flour, mixing until the dough forms.
3. Drop the dough by rounded spoonfuls onto the prepared baking sheet, spacing them about 2 inches apart.
4. Bake in the preheated oven until the edges turn a lovely golden color, approximately 10 to 12 minutes. Transfer the cookies to a wire rack and let them cool for about 10 minutes.
5. In a medium bowl, combine confectioners' sugar, 2 tablespoons lemonade concentrate, and 2 tablespoons butter. Use an electric mixer to beat until the icing is smooth. Stir in food coloring until evenly distributed.
6. Once the cookies are completely cooled, generously spread the pink lemonade icing over each cookie.
