Ingredients

• 3 cups all-purpose flour
• 1 teaspoon baking soda
• 0.5 teaspoon salt
• 1.5 cups white sugar
• 1 cup butter, softened
• 2 eggs eggs
• 1 lemon, zested
• 0.25 cup lemon juice
• 0.5 teaspoon vanilla extract

Instructions

1. Preheat your oven to 350 degrees F (175 degrees C).
2. In a bowl, whisk together flour, baking soda, and salt until well combined. In a separate large bowl, cream together sugar and butter with an electric mixer for about 5 minutes until light and fluffy. Add eggs one at a time, mixing thoroughly after each addition. Stir in lemon zest, lemon juice, and vanilla extract. Gently fold in the flour mixture until just combined. Refrigerate the dough for approximately 30 minutes to chill.
3. Shape the dough into small balls, using about 1 1/2 teaspoonfuls per cookie. Arrange them on baking sheets, spacing them about 2 inches apart.
4. Bake in the preheated oven for about 8 minutes, or until the edges are set and lightly golden brown. Allow the cookies to cool on the baking sheets for 1 minute before transferring them to wire racks to cool completely.
