Roasted Soda Can Chicken Recipe

Ingredients

• 1 (4 pound) whole chicken
• 0.25 cup butter, melted
• 2 tablespoons brown sugar
• 2 cloves garlic, minced
• salt and pepper to taste
• juice of 1 fresh lemon, divided
• 1 (12 ounce) can lemon-lime soda (such as Sprite®)
• 1 small whole onion, peeled
• 1 squeezed lemon half

Instructions

1. Preheat your oven to 350 degrees F (175 degrees C). Remove the giblets from the chicken, then rinse it thoroughly inside and out with water. Pat the chicken dry using paper towels.
2. In a mixing bowl, combine softened butter, brown sugar, minced garlic, salt, pepper, and half of the lemon juice. Generously rub this mixture over the entire chicken, including inside the cavity and carefully beneath the skin.
3. Discard half of the soda from the can, leaving the remaining liquid inside. Pour the rest of the lemon juice into the can. Position the can on a sturdy baking sheet, then carefully set the chicken upright, inserting the can into the chicken's cavity. Seal the neck opening with a quartered onion and a squeezed lemon half to keep the steam inside.
4. Roast the chicken in the preheated oven for approximately 1 1/2 to 2 hours, ensuring the internal temperature reaches a minimum of 180 degrees F (80 degrees C). Carefully remove the roasted chicken from the oven, discard the soda can, and tent the chicken loosely with a double layer of aluminum foil. Allow the chicken to rest in a warm spot for 10 minutes before carving and serving.
