Ingredients

• 2.5 cups unbleached all-purpose flour
• 1 cup rye flour
• 1 teaspoon salt
• 1.5 cups water, divided
• 1 teaspoon brown sugar
• 1 (.25 ounce) package active dry yeast
• 2 tablespoons extra-virgin olive oil
• 0.5 cup all-purpose flour for kneading dough, or as needed

Instructions

1. In a large bowl, combine 2 1/2 cups all-purpose flour, rye flour, and salt.
2. Warm 1/2 cup water in a microwave-safe bowl for 30 seconds. Dissolve brown sugar in the warm water, then add yeast and stir. Let the mixture activate until bubbly, about 10 minutes.
3. Add the yeast mixture to the flour mixture in the bowl.
4. Warm the remaining 1 cup water in a microwave-safe bowl for 30 seconds. Stir olive oil into the warm water and pour over the flour mixture. Knead the dough, adding more all-purpose flour as needed, until smooth and elastic.
5. Shape the dough into a ball and place it in a bowl. Cover with a damp towel and let rise in a warm place until doubled in size, about 1 hour.
6. Punch down the risen dough and transfer it to a floured surface. Roll or shape the dough as desired for your pizza.
