Soft and Spiced Eggnog Cookies Recipe

Ingredients

• 2.25 cups all-purpose flour
• 1 teaspoon baking powder
• 1 teaspoon ground nutmeg, or as needed
• 0.5 teaspoon ground cinnamon
• 1.25 cups white sugar
• 0.75 cup butter, softened
• 0.5 cup eggnog
• 2 egg yolks
• 1 teaspoon vanilla extract

Instructions

1. Prepare all the necessary ingredients.
2. Preheat your oven to 300°F (150°C). In a bowl, sift together the flour, baking powder, nutmeg, and cinnamon. Set the mixture aside.
3. In a large bowl, cream together the sugar and butter using an electric mixer until the mixture is light and fluffy. Incorporate the eggnog, egg yolks, and vanilla extract. Mix at medium speed until well combined.
4. Gradually add the flour mixture to the wet ingredients, mixing at low speed until just combined. Be careful not to overmix.
5. Drop spoonfuls of cookie dough approximately 1 inch apart onto ungreased baking sheets. Lightly sprinkle the tops with nutmeg.
6. Bake the cookies in the preheated oven until the edges turn a golden brown, approximately 20 minutes.
7. Allow the cookies to cool briefly on the baking sheet before transferring them to a wire rack to cool completely.
