Strawberry Feta Chicken Salad Recipe with Homemade Balsamic Vinaigrette

Ingredients

• 1 cup chopped romaine lettuce
• 1 cup fresh spinach
• 1 cup chopped kale
• 1 cup fresh strawberries, hulled and sliced
• 1 cooked chicken breast, sliced
• 0.5 cup sliced almonds
• 0.25 cup crumbled feta cheese
• 1 cup fresh strawberries, hulled and quartered
• 1 tablespoon white sugar
• 0.25 cup balsamic vinegar
• 0.25 cup olive oil
• 1 tablespoon honey
• 1 tablespoon Dijon mustard
• 1 clove garlic, minced
• salt and ground black pepper to taste

Instructions

1. In a medium mixing bowl, toss romaine, spinach, and kale. Evenly distribute sliced strawberries over the greens. Arrange the cooked chicken over the salad. Garnish with almond slices and crumbled feta cheese.
2. Preheat your oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper for easy cleanup.
3. Arrange the quartered strawberries on the prepared baking sheet. Evenly sprinkle with sugar to enhance their natural sweetness.
4. Roast in the preheated oven until the strawberries are softened and slightly golden, approximately 20 minutes. Allow to cool for 10 minutes.
5. In a food processor, combine the roasted strawberries with their juice, balsamic vinegar, olive oil, honey, Dijon mustard, garlic, salt, and pepper. Process until the dressing is completely smooth. Drizzle the delicious dressing generously over the salad and serve immediately.
