Ingredients

• 2.5 cups bleached all-purpose flour
• 0.25 cup cornstarch
• 4 teaspoons baking powder
• 2 teaspoons ground ginger
• 1 teaspoon ground cinnamon
• 0.5 teaspoon ground nutmeg
• 0.5 teaspoon ground allspice
• 0.5 teaspoon ground cloves
• 0.5 teaspoon salt
• 1 cup milk
• 3 large eggs
• 2 teaspoons vanilla extract
• 1 cup unsalted butter, softened until easily spreadable
• 2 cups dark brown sugar

Instructions

1. Position the oven rack in the center and preheat to 350°F (175°C). Grease and lightly flour a 9x13 inch baking pan to prevent sticking.
2. In a large bowl, whisk together the flour, cornstarch, baking powder, ginger, cinnamon, nutmeg, allspice, cloves, and salt. In a separate bowl or pitcher, whisk the milk, eggs, and vanilla extract until well combined.
3. Gradually beat the softened butter into the flour mixture on low, then medium speed until it resembles coarse crumbs with no visible flour. Avoid overmixing. Incorporate about 1/3 of the milk mixture and beat on low until smooth. Add the remaining milk mixture in two parts, beating on medium speed until the batter is just smooth. Add the brown sugar and beat until just incorporated, approximately 30 seconds. Pour the prepared batter into the greased pan.
4. Bake in the preheated oven until a toothpick inserted into the center emerges clean, about 35 to 40 minutes. Briefly cool on a wire rack, then use a table knife to loosen the cake from the edges. Carefully invert onto a serving plate or cooling rack. Allow to cool completely before frosting or dusting with powdered sugar.
