Tropical BBQ Meatballs Recipe: Sweet & Savory Delight

Ingredients

• 1 cup mango chunks
• 2 pounds ground beef
• 0.5 cup bread crumbs
• 3 cloves garlic, minced
• 1 (1 ounce) package dry golden onion soup mix (such as Lipton®)
• 1 tablespoon adobo seasoning
• 1 teaspoon ground thyme
• 1 teaspoon ground ginger
• 1 teaspoon sea salt
• 0.5 teaspoon ground black pepper
• 2 eggs eggs
• 1 (18 ounce) bottle barbeque sauce
• 1 cup mango chunks
• 1 cup canned pineapple chunks
• 0.5 cup white sugar
• 1 tablespoon soy sauce
• 1 tablespoon yellow mustard
• 1 teaspoon ground cinnamon

Instructions

1. Preheat your oven to 350 degrees F (175 degrees C). Lightly coat a rimmed baking sheet with cooking spray to prevent sticking.
2. Blend fresh mango chunks in an electric blender or food processor until smooth, creating a flavorful puree.
3. In a large mixing bowl, combine ground beef, bread crumbs, minced garlic, soup mix, adobo seasoning, dried thyme, ground ginger, salt, and black pepper. Mix well. Add eggs and the pureed mango; mix thoroughly again. Form the mixture into 1 1/2-inch meatballs and arrange them on the prepared baking sheet.
4. Bake in the preheated oven for approximately 45 minutes, or until the meatballs are browned and cooked through with no pink remaining in the centers.
5. In a separate medium mixing bowl, whisk together your favorite barbeque sauce, diced mango, crushed pineapple, brown sugar, soy sauce, yellow mustard, and ground cinnamon to create a delicious tropical BBQ sauce.
6. Take the meatballs out of the oven and remove any excess oil or grease. Turn the oven temperature up to 400 degrees F (200 degrees C). Pour the prepared tropical sauce evenly over the meatballs, ensuring they are well coated, and return them to the oven.
7. Bake in the preheated oven for an additional 20 minutes, allowing the sauce to caramelize and the meatballs to become wonderfully sticky and flavorful.
