Walnut Pumpkin Cookies Recipe with Maple Frosting

Ingredients

• 1 cup white sugar
• 1 cup shortening (such as Crisco®)
• 1 egg egg
• 1 cup canned pumpkin
• 1 teaspoon vanilla extract
• 2 cups all-purpose flour
• 1 teaspoon baking soda
• 1 teaspoon baking powder
• 1 teaspoon ground cinnamon
• 0.5 teaspoon salt
• 1 cup chopped walnuts
• 4 cups powdered sugar
• 0.5 cup butter, softened
• 1 tablespoon milk, or as needed
• 1 teaspoon maple extract, or to taste

Instructions

1. Preheat your oven to 350 degrees F (175 degrees C).
2. In a large bowl, use an electric mixer to beat together white sugar and shortening until well combined. Add the egg and beat until incorporated, then mix in pumpkin purée and vanilla extract. In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined, then fold in the walnuts.
3. Drop small spoonfuls of dough onto ungreased baking sheets.
4. Bake in the preheated oven until the edges are golden brown, approximately 10 to 12 minutes. Let cool completely on a wire rack.
5. While the cookies cool, prepare the frosting. In a medium bowl, use an electric mixer to beat together confectioners' sugar and butter until smooth and creamy. Gradually add milk, 1 teaspoon at a time, until the frosting reaches a spreadable consistency. Stir in maple extract until well combined.
6. Once the cookies are completely cool, spread the maple frosting evenly over each cookie.
